The First Harvest

The tea mushroom turned out well, and it tasted delicious! The only thing I would improve is the carbonation; it could use a bit more fizz. I'll experiment with different recipes, perhaps by letting it steep a bit longer (this batch fermented for six days) or by adding more sugar.

Interestingly, the mushroom didn't float, so a new one formed on the surface. They're both kept under a coverโ€”I'm aware that I have quite a few friends who might faint just thinking about tea mushrooms!

To achieve the perfect straining, I've ordered a cheesecloth. I only had a coffee funnel on hand, but a good metal one will arrive soon.

I'll be planting the second mushroom in a different jar, so I guess I'll be starting my own kombucha farm before long!

Meanwhile, on the other side of a thousand kilometers, my older sister in Moscow is sipping on a "bullshot" cocktail made of vodka and beef broth.
